Sichuan Dragon x Drentse Buffalo cheese

For this pairing, we combine the creamy Drentse Buffalo cheese with Sichuan Dragon, a beer we brewed for Sichuan Amsterdam, the restaurant chain that has been serving authentic and often spicy Chinese food for 30 years. This beer is made with Sichuan peppercorns, which are actually the berries of the prickly ash tree, a member of the citrus family. Their unique properties add a fresh citrus layer, along with spicy undertones and a hint of lavender. The creaminess of the buffalo cheese pairs beautifully with the spicy yet refreshing complexity of the beer. A gentle pairing that will wake up your taste buds, with a nice balance where both the beer and cheese give each other space.

Cube Crusher x Spicy Gouda

Klaver Kaas' Spicy Gouda, from the North Holland village of Winkel, pairs perfectly with the fresh and fruity Cube Crusher. The habanero pepper in this Gouda adds a spicy touch that is hearty. Cube Crusher, an East Coast IPA, offers fresh citrus aromas that balance nicely with the spiciness of the cheese. This pairing is like a Rubik's Cube - hello 90s kids - a battle without end in which every bite and sip reveals yet another combination of flavours to unravel.

Bock Brûlée x Stompetoren Grand Cru

The rich, full flavour of the Stompetoren Grand Cru, a Gouda aged for 2.5 years, blends beautifully with the intense and toasted notes of the Bock Brûlée. The white crystals in the cheese, which provide a nice concentration of proteins and salts, add an extra dimension to every bite. They perfectly complement the rich mix of roasted malt, caramel and a hint of vanilla in the beer. The hint of vanilla and the subtle sweetness in the Bock Brûlée make this pairing a true dessert without the need to light the burner. A combination that feels like a warm blanket on a crisp autumn evening.

Stroopwafel Stout x Frisian Nagelkaas

Frisian Nagelkaas, a spicy speciality from the north of the Netherlands, spiced with cloves, goes surprisingly well with the sweet and rich flavours of our Stroopwafel Stout. With notes of caramel, vanilla, cinnamon and chocolate, this beer is like a liquid stroopwafel. The spiciness of the cheese, with its deep, earthy notes, is a perfect contrast to the sweet stout. A combination that is almost too Dutch to be true - cheese, cloves, beer and treacle-waffle together? That's some Dutch engineering!
