This is the last India Pale Ale in our ‘Monster IPA series,’ and so we made something extra special out of it: a hop-forward beer infused with the herbal qualities of tea. It’s brewed with a tasteful blend of Amarillo, Citra, and Nelson Sauvin hops for a smooth and citrussy character that becomes accentuated by Earl Grey tea.
Five grams per liter of Earl Grey were added during the fermentation process at various stages. The dried tea leaves were steeped in the beer to extract the flavors and aromas of Earl Grey, most notably the tannins and the bergamot in the tea. The tannins emulate the bitterness in hops, while the strong citrus notes from the bergamot beautifully complement the mix of Amarillo, Citra, and Nelson Sauvin hops. The combination of these hops gives the beer floral features and intense aromas of citrus fruits like oranges and grapefruit that work nicely with the herbaceous properties of Earl Grey. The beer also has a thorough malt bill consisting of barley, wheat, spelt, and oats – giving this IPA a refined body and pleasant sweetness.
